Oat Biscuits

Oatmeal biscuits with roasted cashews are a wonderful addition to a fruit salad topped with fresh passion fruit sauce.

  • 250 g Oatmeal
  • 240 g Wheat Flour
  • 2 tsp Baking Soda
  • 160 g Caster Sugar
  • 75 g Roasted Cashew Nuts
  • 2 tsp Crushed Cardamom Kernels
  • 100 g Butter
  • 2 Eggs
  • 100 g Natural Yogurt


  • 2 Passion Fruits
  • 100 ml Whipped Cream
  • 100 g Natural Yogurt
  • 40 g Icing Sugar


Step 1

Heat the oven to 225 °.

Step 2

Mix oatmeal, wheat flour, baking soda, sugar, coarsely chopped nuts and cardamom. Melt the butter. Beat the eggs with yogurt and chilled butter.

Step 3

Stir in the flour mixture and work together to form a dough. Divide the dough into 4 pieces and roll them out to the length of a baking tray.

Step 4

Place them on a baking tray lined with baking paper. Bake in the middle of the oven for 13-15 minutes

Step 5

Take out and cut the lengths of dough into oblong long slices. Put them back on the tray with the cut surface up and bake for another 6-8 minutes

Step 6

Turn off the oven, open the oven door and leave the biscuits to dry for about 30 minutes.

Step 7

Divide the passion fruits into halves and scrape out the contents. Whisk cream and stir in the passion fruit and yogurt. Flavour with icing sugar. Serve the biscuits with the sauce and a fruit salad of summer fruits and berries."
