Frozen Cheesecake

Frozen cheesecake is a perfect dessert for big dinners because you can make it in advance and freeze it. Get the cheesecake out before serving and garnish with your favourite fruits and berries.

  • 15 Digestive Biscuits
  • 75 g Butter


  • 3 Eggs
  • 120 g Caster Sugar
  • 1 Pinch Vanilla Powder
  • 400 g Cream Cheese
  • 200 ml Whipping Cream


  • 125 g Raspberries
  • 1 Handful Lemon Balm


Step 1

Mix or crush the biscuit nicely. Melt the butter and mix with the crumbs. Press out the mixture at the bottom on a round shape with removable edge, about 24 cm in diameter.

Step 2

Divide the eggs into yolks and whites. Whisk egg yolks, sugar and vanilla powder in a bowl. Stir in the cream cheese.

Step 3

Beat the cream loosely. Whisk the whites to a hard foam. First fold the whipping cream and then the whites gently into the cream cheese mix. Pour the mixture into the mould. Cover with plastic film and leave in freezer for at least 4 hours.

Step 4

Take out the cheesecake about 15 minutes before serving. Garnish with raspberries and leaves from the lemon balm."
