Vegetable Gratin - Cheesy Courgette Tomato Style

A vegetable gratin made with courgette and cherry tomatoes, topped with cheese and cream poured over before being put in the oven. Vary the vegetables according to taste and season.

  • 300 g Courgettes
  • 500 g Cherry Tomatoes
  • Butter
  • 175 g Feta/Salad Cheese
  • 150 ml White Sauce
  • 1 Crushed Garlic Clove
  • 1 g Black Pepper
  • 1 tbsp Chopped Fresh Thyme


Step 1

Heat the oven to 250 °.

Step 2

Cut the courgette into 2 cm pieces. Slice the tomatoes into halves.

Step 3

Fry the courgette in butter in a hot frying pan until it is coloured.

Step 4

Add the courgette and tomatoes to an ovenproof dish.

Step 5

Mash the cheese and mix with cream, garlic, pepper and thyme.

Step 6

Spread the mix over the vegetables. Grill in the upper part of the oven for 10 - 12 minutes. Serve once the dish has cooled a little.
