Potato and Chicken Salad

Cook potatoes and chicken together in the oven, and serve with a tomato salad. Mix and enjoy all the flavours!

  • 500 g Chicken Breast Fillets
  • 600 g Potatoes
  • 2 tsp Butter
  • 1 tsp Salt
  • 1 Red Onion
  • 3 Tomatoes
  • 60 g Rocket
  • 2 tbsp Rapeseed Oil
  • 2 tbsp Balsamic Vinegar
  • 250 g Cottage Cheese


Step 1

Heat the oven to 225 °. Slice the potatoes. Place them on a baking tray lined with baking paper. Cook in the middle of the oven for 25-30 minutes.

Step 2

Brown the chicken fillets on both sides in butter in a frying pan. Season with salt and pepper. Add the chicken to the baking tray with the potatoes to cook for about 15 minutes.

Step 3

Peel and slice the onion. Cut the tomatoes into pieces. Mix onions, tomatoes and rocket in a large bowl. Mix in oil and vinegar.

Step 4

Cut the chicken into slices. Add the potatoes and chicken to the salad. Dollop on some cottage cheese.
