Mediterranean Gratin
Mediterranean gratin with saffron, fennel and olives - taking your taste buds to the Mediterranean!

Ingredients
- 750 g Sweet Potato
- 2 Garlic Cloves
- 250 g Fennel
- ½ g Saffron
- 1 tsp Salt
- 1 Pinch White Pepper
- tsp Dried Thyme
- 100 g Black Olives
- 200 ml Whipping Cream
- 100 ml Semi-Skimmed Milk
Method
Step 1
Heat the oven to 200 °.
Step 2
Peel and slice the potatoes. Peel and chop the garlic. Halve the fennel and cut it into slices.
Step 3
Mix potatoes, garlic, fennel, saffron, salt, pepper, thyme and olives in a greased ovenproof dish.
Step 4
Pour on the cream and milk. Bake in the lower part of the oven for 40-45 minutes.
