Green Chimichurri

Spicy salsa, great for the grill. Use whole herbs for a fuller flavour, including the stems and leaves!

  • 4 servings


  • 10 Sprigs of Fresh Parsley
  • 3 Sprigs of Fresh Mint
  • 2 Sprigs of Fresh Oregano
  • 100 ml Olive Oil
  • 50 ml Light Vinegar (Preferably Sherry Vinegar)
  • 1 Peeled Garlic Clove
  • ½ Fresh Red Chilli
  • 2 Pinches Salt
  • 1 Shallot


Step 1

Rinse the herbs and mix together all of the ingredients, except shallots, into a coarse green sauce.

Step 2

Peel and chop the onion finely and mix into the sauce.
