Fruit Cake

A gluten-free cake that doesn't even need to be baked. Mix the ingredients, freeze and it's ready to eat at any time.

  • 120 g Almonds
  • 100 g Salted, Roasted Sunflower Seeds
  • 80 g Raisins
  • 200 g Dried Apricots
  • 1 tsp Ground Cinnamon
  • 1 tbsp Orange Juice


  • 100 ml Whipped Cream
  • 150 ml Vanilla Quark
  • 2 Oranges
  • 25 g Dark Chocolate


Step 1

Roughly mix almonds, sunflower seeds, raisins, apricots and cinnamon. Stir in orange juice. Wrap plastic film around a baking dish that has a detachable edge, about 24 cm in diameter.

Step 2

Flatten the mixture into the dish. Let it solidify in the freezer for about 1 hour.

Step 3

Peel the oranges and cut the segments. Chop the chocolate. Remove the cake, remove the plastic film and place the cake on a dish.

Step 4

Beat the cream and spread on top of the cake. Garnish with cream, orange slices and chocolate.
