Chocolate Cupcakes

Impress with these stylish cupcakes with a lovely chocolate flavour.

  • 3 Eggs
  • 160 g Caster Sugar
  • 1 tsp Vanilla Sugar
  • 75 g Butter
  • 100 ml Sour Cream
  • 100 g Dark Chocolate
  • 210 g Wheat Flour
  • 1 tsp Baking Soda
  • 4 tbsp Cocoa
  • ½ Pinch Salt

Chocolate Frosting

  • 150 g Cream Cheese
  • 320 g Icing Sugar
  • 1 tsp Vanilla Sugar
  • 40 g Cocoa
  • 100 g Blueberries


Step 1

Heat the oven to 175 °. Whisk eggs, sugar and vanilla sugar until light and airy. Melt the butter, allow to cool and stir in the sour cream. Stir the butter mixture into the egg mixture.

Step 2

Melt the chocolate in the microwave or over the water bath and fold into the egg mixture. Mix flour, baking powder, cocoa and salt, fold into the egg mixture.

Step 3

Divide the cake mixture into the muffin moulds. Bake in the middle of the oven for about 15 minutes. They should be a little gooey in the middle when taken out. Let cool.

Step 4

Whisk cream cheese, icing sugar, vanilla sugar and cocoa until creamy. Pipe or spread the frosting on the cakes. Top with some blueberries and shake cocoa over to finish.
