Chicken Enchiladas

Enchiladas like tacos originate from Mexican cuisine. Enchiladas are folded rolls of tortilla bread, often filled with meat. Choose your favourite!

  • 400 g Chicken Breast Fillets
  • 2 Yellow Onions
  • 1 tsp Salt
  • 1 Knob Butter
  • 1 tsp Sambal Oeleks
  • 200 ml Creme Fraiche
  • 4 Large Tortillas
  • 160 g Extra Mature Cheddar


Step 1

Heat the oven to 225 °C.

Step 2

Shred the chicken. Peel and chop the onions. Salt and brown the chicken in butter in a frying pan. Add the onions and stir in sambal oelek and crème fraîche and let it boil for a few minutes.

Step 3

Spread the mixture on the tortilla bread and roll together. Place the tightly rolled tortillas on an ovenproof dish. Sprinkle with cheese. Cook in the middle of the oven 10-15 minutes.
