Blueberry Muffins
A little lemon peel enhances the taste of these delicious blueberry muffins.

Ingredients
- 2 Eggs
- 80 g Caster Sugar
- 250 g Quark
- 50 ml Blueberry Jam
- ½ Lemon Peel
- 50 g Butter
- 150 g Wheat Flour
- 1 tsp Baking Soda
Frosting
- 300 g Cream Cheese
- 60 g Icing Sugar
- 2 tsp Vanilla Sugar
- 1 Lemon Peel
Method
Step 1
Heat the oven to 225º. Whisk eggs and sugar until fluffy. Stir in quark, jam, lemon and butter. Mix flour and baking soda and stir into the mixture.
Step 2
Spoon it into muffin moulds and bake in the middle of the oven for 12-14 minutes. Leave cooked muffins to cool on a wire rack.
Step 3
Whisk the frosting together to form a firm and smooth cream; spread onto the muffins. Garnish with blueberries and lemon peel.
