Beef and Squash Skewers with Cabbage Salad

Two kinds of juicy grilled skewers, served with a cabbage salad full of beautiful flavours. Food that makes you happy!

Ingredients

Beef And Squash Skewers

  • 400 g Beef Mince
  • ½ tsp Coarse Salt
  • 1 Pinch Freshly Ground Pepper
  • 8 Bamboo Skewers (Approximately 20cm Long)
  • 1 Unwaxed Lemon (Wedged)
  • 200 g Courgettes Cubes
  • ½ tsp Coarse Salt

Cabbage Salad

  • 300 g Finely Chopped Cabbages
  • 100 g Split, Blanched Peas
  • ½ tbsp Liquid Honey
  • 2 tbsp Squeezed Lemon Juice
  • 100 g Lightly Crumbled Salad Cheese
  • 100 g Finely Chopped Mustard Sprouts Or Cress
  • 1 tbsp Black Sesame Seeds

Topping

  • 300 g Toasted Coarse Bread

Method

Step 1

Flavour the minced meat well with salt and pepper. And roll into 12 meatballs and place onto skewers, 4 meatballs with lemon slices in between per skewer.

Step 2

Put the courgette on the last 4 skewers. Let a grill pan warm for approx 4 minutes on a high heat. Grill beef skewers for approx 4 minutes on each side (approx 8 minutes in total) - loosen the meatballs with a palette knife before turning the skewers.

Step 3

Remove the skewers from the pan and keep them warm. Grill the courgette skewers for approx 2 minutes on each side, sprinkle with salt and remove them from the pan.

Step 4

With the cabbage, sprinkle the sweet peas on top of the dish. Drizzle the honey and lemon juice.

Step 5

Sprinkle the crumbled cheese, mustard sprouts and sesame seeds onto the salad and serve it with toast and the warm beef and squash skewers.
